Assuming the club can get the appropriate liquor licenses/permits and sets up a biergarten, I'm inclined to spend my money on site, if some of that money gets cycled back to the club.

I'd love this Beer garden. Time will tell I guess.

Having spoken to Sean Mann about this subject a few weeks ago, I believe he indicated that 1) The correct licenses are all set. 2) Beer money profits are set up to go back into restorations of historic buildings and youth sporting programs in the area through a non-profit they created for the specific purpose of selling beer at events there. I don't remember the exact wording of the categories, but you can get the general idea.

On the other we can use that money on switching to paid players.

It's much, much easier for a nonprofit to get a temporary liquor license than a for-profit. Nonprofits can get up to 12 special licenses a year with minimal paperwork. I don't know that it's even possible in Michigan for a for-profit to get a license to sell alcohol at a facility it only leases on a part-time basis.

Well, I think the idea is that it's set up to give back into things that affect the wider community and are relevant to the club's operations and won't need to be funded in a different manner. So things like the youth camps, further stadium renovations etc.

There is always some underlying redtape that only you know about.

I think it's awesome that liquor profits are going back into the community. That's really kind of what City is about and why it's different than most (all) other clubs in the US.
I'm proud of our team and its ownership for what they're doing and the plans I've heard about for the future.
